Vegetable Tian

What is a Tian?  A tian is an earthenware vessel of Provence used both for cooking and serving. It is also the name of the dish prepared in it and baked in an oven.You can also use a pie pan. 

Ingredients:

  • 1 medium onion, thinly sliced

  • 1 tablespoon minced rosemary

  • 3 cloves garlic, 2 crushed and 1 cut in half

  • 1 tablespoon olive oil

  • 2 Roma tomatoes, thinly sliced

  • 1 medium eggplant, thinly sliced in rounds

  • 1 medium yellow squash, thinly sliced in rounds

  • 2 medium green zucchinis, thinly sliced in rounds

  • Sea salt, to taste

  • Ground pepper, to taste

  • 1 bunch fresh thyme, reserving 5-6 sprigs for garnish

  • 2 tablespoons breadcrumbs

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F.

  2. Prepare the Base:

    • In a large skillet, heat the olive oil over medium heat.

    • Add the sliced onion and tent with parchment paper, then cook until soft and translucent, about 5 minutes.

    • Add the minced rosemary and 2 cloves of crushed garlic. Cook for an additional 1-2 minutes until fragrant. Season with salt and pepper.

    • While the onions are cooking, rub the bottom of a baking dish with the halved garlic clove.

    • Place the sliced vegetables on a layer of parchment paper and drizzle liberally with olive oil and season with salt and pepper. Tip: create an assembly line.

    • Once the onions are cooked, spread the onion mixture evenly on the bottom of the baking dish.

  3. Layer the Vegetables:

    • Arrange the sliced vegetables vertically in the dish, alternating between eggplant, yellow squash, zucchini, and tomatoes, placing sprigs of thyme between the layers.

    • Season with sea salt and ground pepper and sprinkle with breadcrumbs.

  4. Bake the Tian:

    • Place the assembled tian in the oven and bake for 20-25 minutes or until the vegetables are tender and the breadcrumbs are golden brown.

  5. Garnish and Serve:

    • Sprinkle fresh thyme sprigs over the top before serving.

    • Serve warm as a side dish or a light main course.
