Millionaire’s Bacon

Sweet, salty, and savory – what’s not to love? This Millionaire’s Bacon is an amped up, decadent twist on traditional brunch bacon with the addition of spiced brown sugar. One taste and you’ll definitely feel like you’ve hit the flavor jackpot!

Ingredients (recipe makes one baking sheet of bacon):

  • 3/4 cup brown sugar

  • 1 teaspoon freshly ground black pepper

  • 1/2 teaspoon dry mustard

  • Pinch of cayenne pepper

  • 8 slices thick-cut bacon

Instructions:

Preheat the oven to 375°. Important step: line a large rimmed baking sheet with aluminum foil and set a rack over the foil. If you don't line the pan with foil you will have a tough time cleaning the pan with all of the burnt sugar!

Coat the bacon: Combine all of the dry ingredients in a bowl. Toss each strip of bacon in the mixture and coat evenly and arrange on a baking sheet.

Bake: for 25- 30 minutes. Make sure you have the exhaust fan running. The bacon is done when the sugar is melted and the bacon is brown and shiny. 

Cool: on a rack for 5 minutes before removing with a metal spatula to a serving plate. Continue to allow it to cool for another five minutes before cutting each slice in half. As the bacon sits it will crisp up more. 

Store for later: This can be made a day ahead. Separate the bacon pieces between pieces of waxed paper and place in your microwave until ready to serve.
