Chilled Cantaloupe Soup

Cool, refreshing, and lightly bubbly, this chilled soup is the perfect blend of sweet melon, zesty lime, and creamy vanilla yogurt. Topped with fresh berries and a hint of ginger, it's an elegant summer appetizer or a light, sophisticated dessert.

Ingredients

  • 1 ripe honeydew melon or 2 cantaloupes (5-6 pounds total), peeled, seeded, and chopped

  • 2 tablespoons jarred minced ginger

  • ¼ cup fresh lime juice (about 2 limes)

  • 1 cup regular or Greek vanilla yogurt

  • ½ cup chilled Prosecco, for finishing (optional)

  • Small berries (such as raspberries or blueberries) for garnish

Instructions

  1. Blend the Base: Quarter melons, remove seeds, peel and cut into cubes. Place cubes in a food processor and add the next three ingredients and blend until smooth. This can be done a day ahead of time. 

  2. Chill: Transfer the soup to a large bowl or pitcher, cover, and refrigerate for at least 2 hours until well chilled.

  3. Serve: Pour into chilled bowls or glasses and top with a splash of Prosecco, if desired.

  4. Garnish & Enjoy: Add small berries on top for a fresh, colorful finish. Serve immediately.

For a tropical twist, you can substitute pineapple for half of the melon. These also make great popsicles (minus the prosecco) for summertime fun at the pool! Enjoy! 🍈🥂
