Roasted Rosemary Cashews

These cashews make a delicious, addictive snack with the warmth of rosemary and a hint of heat from the cayenne. The brown sugar adds a touch of sweetness, balancing the savory flavors perfectly. Enjoy on their own, or serve them on a cheese board to add extra crunch and texture to your spread.

Ingredients:

  • 1 pound unsalted raw cashews

  • 2 tablespoons minced fresh rosemary

  • 1/2 teaspoon cayenne pepper

  • 2 teaspoons brown sugar

  • 1 tablespoon kosher salt

  • 1 tablespoon melted butter

Instructions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

  2. Roast the cashews:
    Spread cashews in a single layer on a baking sheet and roast for 5-7 minutes until lightly browned. 

  3. Prepare the seasoned butter: While the cashews roast, combine the rosemary, cayenne pepper, brown sugar, and salt in a large mixing bowl. Add the melted butter to make a paste. 

  4. Season the cashews: Thoroughly toss the cashews with the spiced butter.

  5. Enjoy:
    Serve the roasted rosemary cashews warm or at room temperature. Store leftovers in an airtight container at room temperature for up to a week.
