Pasta Beurre Blanc

This simple yet elegant pasta recipe showcases rich, buttery flavors, complemented by the salty tang of pecorino romano cheese.

Ingredients:

  • 1 pound of pasta, whichever is your preferred shape

  • 2 tablespoons unsalted butter

  • 1/2 cup grated pecorino romano cheese, plus additional for finishing

  • Salt and pepper to taste

Instructions:

  1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve about 1 cup of the pasta cooking water, then drain the pasta and set aside.

  2. Prepare the Beurre Blanc:
    Return to the pot to the stove and turn the heat to high. Add the reserved pasta water and the butter, bringing to a boil.

  3. Incorporate Pasta and Cheese:
    Add the drained pasta back to the pot along with the grated cheese, tossing it in the melted butter to coat evenly. Turn off the heat and season with salt and pepper.

  4. Season and Serve:
    Transfer the pasta to serving bowls and sprinkle with additional grated cheese.
    Serve immediately.
