Italian Milk Braised Pork Roast

Ingredients:
3-4 lb pork roast
1/2 cup dry white wine (Pinot Grigio)
1 1/2 cups whole milk
1/2 cup heavy cream
1 tsp anchovy paste
1/2 tsp red pepper flakes
Zest of 1 lemon
2 sprigs rosemary & 2 sprigs sage, tied with kitchen string
1 small container cremini or button mushrooms, sliced
2 tbsp olive oil or butter
Salt & cracked black pepper, to taste
Instructions:
Sear the Pork (Optional but recommended):
Pat the pork roast dry and season it generously with salt and black pepper.
Heat olive oil or butter in a large skillet over medium-high heat.
Sear the pork roast on all sides until golden brown (about 3-4 minutes per side).
Prepare the Slow Cooker:
Transfer the pork to the slow cooker.
Make the Sauce:
In a small pitcher or mixing bowl, combine the wine, milk, heavy cream, anchovy paste, red pepper flakes and lemon zest.
Pour the mixture around the pork in the slow cooker.
Nestle the herb bundle into the liquid next to the pork roast.
Slow Cook:
Cover and cook on high for 1 hour, until the pork reaches an internal temperature of 100 degrees.
Add the sliced mushrooms and continue cooking until the internal temperature reaches 145 degrees, approximately 2 hours total.
Finish the Sauce:
Remove the pork and set aside to rest.
Turn the crock pot to low and allow the sauce to reduce, uncovered, for about 15 minutes.
Discard the herb bundle.
Blend the sauce with an immersion blender until smooth (or leave as is for a more rustic feel).
Taste and adjust seasoning as needed.
Serve:
Slice the pork roast and spoon the creamy mushroom sauce over the top.
Garnish with fresh parsley for a pop of color and freshness.
